Feed Your Family for Under $60 AND Stock Your Pantry (6 Dinner Plan)

This week’s menu is a little different in the best way. It is either going to be super cheap, or it is going to help you stock up on a bunch of pantry basics at the same time. A lot of these ingredients, like ketchup, vinegar, corn starch, and seasonings, are things you will use again and again, so this is not just about dinner this week. It is about making future meals easier, too.

If your pantry is already stocked, your total will likely come in quite a bit lower than mine, which was $53.90 for 25 items at Walmart in Yazoo City, MS. If your pantry is looking a little puny, this is the perfect week to build it up while still feeding your family well.

Easy Meals for Weeek

Chicken & Zucchini Stir Fry with Rice

This is a quick, budget-friendly dinner that comes together fast and uses simple pantry ingredients. You can swap the zucchini for broccoli or a frozen veggie mix if that’s what you have, and using leftover rice makes this even easier on busy nights.

Sweet Potato Buddha Bowls

This is a simple, veggie-packed meal that feels fresh but still filling thanks to the sweet potatoes and black beans. If you want to change it up, try adding a little shredded cheese or using a different bottled dressing you already have on hand.

Italian Herb Chicken Sheet Pan (Sweet Potatoes & Green Beans)

A true one-pan dinner that keeps cleanup easy while still giving you a full meal. Frozen green beans work just as well as fresh here, and you can swap in regular potatoes if that’s what you already have.

Creamy Bacon & Pea Pasta Salad

This is a great make-ahead option that works for dinner or leftovers the next day. If you are out of peas, frozen mixed veggies can work in a pinch, and a little mustard added to the dressing gives it an extra flavor boost.

Sweet & Sour Turkey Meatballs with Veggies and Rice

A simple takeout-style dinner made with pantry staples and one bag of frozen veggies to keep costs down. Smaller meatballs cook faster and hold together better, and you can use ground chicken if that’s cheaper in your area.

Chicken Caprese Style Pasta + Spinach Side Salad

This is a fresh but still comforting pasta that uses a small jar of pesto for big flavor. If cherry tomatoes are pricey, diced regular tomatoes work just fine, and you can use any salad dressing you already have for the spinach side.
