Simple Family Dinners Under $60 with Short Ingredient Lists (Week#94)
Keeping dinner simple doesn’t have to mean sacrificing flavor or blowing your grocery budget. This week’s meal plan focuses on recipes that use just 5 to 6 ingredients each, making it easier to shop, prep, and actually follow through on your plan. Fewer ingredients means less overwhelm, fewer forgotten items in the fridge, and more meals that just work on busy nights.
Now of course, you can always add extra ingredients if you have them on hand, but starting with a simple, solid base is what makes these meals so doable. This week’s plan comes in at just 24 items for $52.79 at Walmart, which means you’ve got plenty of wiggle room to grab staples, stock up on deals, or fill in anything your kitchen might be missing.

If you want to see the full shopping list on Walmart in your area, all you have to do is click my Walmart Grocery list and change the zip code to your area. *This is an affiliate link, and I do make a small commission on any purchases, but at no additional cost to you!*
**** Please note, that every once in a while, an item that I pick turns out to be regional. This means that it may be a much higher price in some areas. Always double check the list and if you see an item that is much higher than normal, just adjust as needed.
No Fuss Dinners for the Week
Chicken & Stuffing Bake
This cozy, one-pan dinner is creamy, filling, and perfect for busy nights when you don’t want to pre-cook anything. You can swap green beans for broccoli or mixed veggies, and chicken thighs work great here if they’re cheaper.

Pork Street Tacos
Tender crockpot pork paired with crunchy slaw and creamy refried beans makes these tacos feel like a complete meal. Try adding a splash of lime or a spoonful of salsa for extra brightness, or use corn tortillas if that’s what you have.

Orange Chicken Rice Bowls
This easy skillet meal brings a sweet, takeout-style flavor using simple pantry ingredients and fresh asparagus. Frozen broccoli or green beans can be swapped in, and cutting the asparagus smaller helps everything cook quickly in one pan.

White Bean Spinach Garlic Pasta
A hearty, budget-friendly pasta that uses white beans to add protein and make it feel like a full meal without meat. If you have picky eaters, you can blend the beans in a food processor first so they melt right into the sauce without anyone noticing. If you want to bulk it up even more, you can easily add cooked chicken or sliced sausage.

Baked Chicken Enchiladas
These cheesy enchiladas come together quickly with simple ingredients and a flavorful green sauce. For a creamier filling, mix a few ounces of cream cheese into the chicken before rolling. A Mexican blend cheese melts well here and keeps things simple and budget-friendly.

Garlic Butter Pork & Rice
This meal is rich, simple, and full of flavor with tender pork and broccoli coated in garlic butter. A squeeze of lemon at the end helps cut through the richness and keeps it from feeling too heavy. If your pork browns too quickly, lower the heat before adding the butter to prevent it from burning.
