Week 60: 6 Tasty Dinners for under $60 at Walmart!

This week is all about super simple recipes that also let you sneak in vegetables! I am not really a huge fan of hiding vegetables in meals but sometimes you can add vegetables to a dish, and they are not super noticeable!

Vegetables can still add flavor, add nutrients, and not be super obvious right? Yup they can! So, this week our meals are super yummy even for those picky eaters!

Our total came out to $58.20 at the Walmart Supercenter in Charlotte, North Carolina. We are using a lot of basics this week, you could easily get your total less than mine! Make sure to check your kitchen before you go shopping.

6 Nights of Yummy Meals

Crispy Island Fish Bowls

I recently saw that these Gorton’s battered and breaded fish fillet are on sale at Walmart! If you are not a fan of fish, you can totally swap these out for breaded chicken patties or even chicken nuggets or chicken fingers!

These can also be easily made into wraps or Tacos if you prefer instead of them being a rice bowl!

Southwest Pork Loaded Potatoes

This is a super easy crockpot recipe that you can easily do so much with! Once cooked, you end up with this yummy gravy that is perfect for spreading over mashed potatoes.

These could also easily be changed into nachos with tortilla chips or served over crispy fries or tater tots!

One Pot Cheesy Ziti

I love a good one pot meal, and this is so simple yet always a crowd pleaser. Think of an easy spaghetti, but the cheesy cottage cheese or ricotta cheese really gives you all the flavor of a baked pasta without taking all the time!

Sweet Pork & Broccoli Bowls

In my area the super tasty Chinese restaurant closed down, so this super easy honey garlic sauce has been a huge game changer for making takeout at home.

Yes, this sauce can easily be used on so many different proteins! I love it on chicken, shrimp, ground beef, and of course pork too!

Zesty Lemon Chicken Pasta

This simple chicken and pasta salad is a classic dish that can be twisted in so many different ways. We are starting with a Lemon Pepper Rotisserie chicken, but you can easily use a plan chicken as well.

I really love to use items in unexpected ways just like the pickle juice here. Pickle juice is basically dill flavored vinegar but suprisingly it doesn’t really keep that pickle flavor for super long, but it gives you all the acidity you need to make this simple dressing work.

I prefer my salads not drowning in sauce, but you can easily double the sauce if you want a chicken and pasta salad that has more sauce!

Butter Ranch Sausage & Potatoes

This is actually one of my favorite sheet pan meals to make, so I had to try it in the crockpot! It normally takes about 1 hour in the oven, which isn’t always a great option.

So, by making this in the crockpot, you can get all the same flavor without having to heat up the kitchen or having to babysit this dinner!

Low-Cost Fruit Options to Add:

I am a huge fan of adding fruit to dinners. This small, yummy part helps kids know they will love at least something on their plate.

So, whenever I have a little wiggle room in my budget, I try to pick up 2-3 fruits to add to meals. Here are some good options that you can grab this week! (Try mixing fresh fruit and canned fruit together for some added variety)

It’s also been shown that most Americans don’t eat enough fruit and vegetables, so add some to your dinner! (Remember you don’t need a ton of fruit either, just a 1/4 to 1/2 a cup can help fill you up at mealtime.)

*Walmart is not always the cheapest when it comes to fresh fruits. Lots of local stores run better sales and have fruit as loss leaders, so check your local stores for some better deals if needed!*
