Week 59: Yummy Dinners for Under $60
Sometimes, I get a little too ahead of myself. I am always chasing the next big, yummy flavor that sometimes I forget that simple can be the ultimate yummy! This is especially true with my kids.
Even though I want to constantly try new things and explore new flavors, my kids are really just learning and growing when it comes to food. So, this week we are reversing course and going back to some simple, yummy basics.
Our total this week comes from the Super Walmart Center near Auburn, California. Yes! These are prices in California! You can easily eat well on a small budget anywhere in the US if you want to!

Week Full of Meals
Roasted Ranch Chicken with Potatoes and Carrots
This could be a simple sheet pan meal, but I find I have to use two pans with this amount of chicken. I also love that this meal makes a ton so it’s super easy to make lunches from the leftovers.
If you are not a huge fan of ranch, you can easily switch out the seasonings to one that you do prefer!

Bacon & Tomato Tarts with Salad
This has got to be one of the easiest and yet so satisfying dinners to make! You can easily switch this up as well by using different shredded cheeses, throw in some spice with diced jalapenos, and so much more!

Mediterranean Turkey Bowls
Now that spring is here, I feel like we eat this mixture of tomato, cucumbers, and Italian Dressing all the time. It is so good, and you can easily add lots of other options to it as well like yellow and red onions, olives, or even lemon juice/zest.

BBQ Chicken with Mac & Cheese
Since its Spring, we love to grill! This super simple dinner is perfect for playing outside and enjoying the weather. Some baked mac and cheese fans may not forgive me for not having breadcrumbs or crackers on top, but those are easy additions you can make for yourself!

Bacon & Pea Pasta
This is a super simple pasta that my kids adore! We have switched this up a little and added precooked chicken or even added fresh or canned mushrooms too!

Breakfast Sausage Bowls
This month is Brunch Month, so we had to work a little breakfast into the dinner this week! One thing I love about making dinners with a bowl style, is that you can easily mix and match based on what each person likes.
Since we did have some wiggle room on the budget, you can easily add some fried eggs or scrambled eggs to this as well! Maybe make a little French Toast instead? All great options!

Low-Cost Fruit Options to Add:
I am a huge fan of adding fruit to dinners. This small, yummy part helps kids know they will love at least something on their plate.
So, whenever I have a little wiggle room in my budget, I try to pick up 2-3 fruits to add to meals. Here are some good options that you can grab this week! (Try mixing fresh fruit and canned fruit together for some added variety)
It’s also been shown that most Americans don’t eat enough fruit and vegetables, so add some to your dinner! (Remember you don’t need a ton of fruit either, just a 1/4 to 1/2 a cup can help fill you up at mealtime.)
*Walmart is not always the cheapest when it comes to fresh fruits. Lots of local stores run better sales and have fruit as loss leaders, so check your local stores for some better deals if needed!*
