No Oven Needed: 6 Budget-Friendly Dinners for Under $60 (Week#98)
I asked my audience on Facebook, and they said it’s time to switch into summer mode. That means no oven, keeping the kitchen cooler, and not running up the electric bill just to get dinner on the table. Because let’s be honest, nothing is worse than heating up the whole house when it’s already blazing hot outside.
This week’s menu sticks to that plan with simple meals made using the stovetop, crockpot, or air fryer. The full grocery list came out to 31 items and just $56.91 at the Super Walmart in Summerville, SC, making it an easy and affordable option for busy summer nights.

Summer Ready Family Meals
BBQ Chicken Chopped Salad
If you want to stretch this meal a little further, serve it with a side of tortilla chips or bread so it feels more filling. You can also swap the corn for black beans if that’s what you already have on hand.

Chorizo & Potato Tacos with Zucchini
Pat the canned potatoes dry before adding them to the skillet so they can brown instead of staying soft. If zucchini isn’t your thing, you can easily swap it for another quick-cooking vegetable like bell peppers, yellow squash, or green beans.

Hawaiian Chicken Salad Sandwiches
This is a great make-ahead option since the chicken salad can be prepped earlier and chilled. If you’re not a fan of mayo, you can swap part or all of it with plain Greek yogurt for a lighter option that still keeps everything creamy.

Sausage Alfredo Pasta
If you’re not a fan of Alfredo, this works just as well with a simple tomato-based sauce. You can also swap the peas for another easy vegetable like broccoli or green beans depending on what you have.

Chicken & Cucumber Rice Bowls
If your yogurt sauce feels too thick, add a small splash of water or lemon juice to loosen it so it drizzles more easily over the bowls. You can also swap the feta for a little shredded cheese or leave it off if you want to keep the cost down.

Italian Pasta Salad
If the pasta absorbs too much dressing after chilling, just add a little more before serving to freshen it up. You can also swap the garbanzo beans for another canned bean like white beans if that’s what you have on hand.
