Affordable Meal Plan: 6 Easy Dinners for Under $60 This Week (Menu #81)
Comfort food doesn’t have to come with a high price tag! With just $55.13 spent on 28 items at the Super Walmart in Newton, MS, this week’s menu includes everything from creamy pastas to tangy slow cooker chicken and even an easy shrimp dinner. These meals are warm, budget-friendly, and perfect for busy weeknights.
If you check your fridge, pantry, and freezer first, you can probably get your total even lower than mine. There are quite a few basics in this plan like brown sugar and soy sauce that you might already have at home. A quick inventory before you shop can make a big difference!

Fast and Fuss-Free Meals
Pesto Chicken Bake with Potatoes & Tomatoes
This flavorful sheet pan dinner is full of color and comfort, as the chicken, potatoes, and tomatoes roast together in one pan for an easy meal with minimal cleanup. You can swap the potatoes for sweet potatoes, or use zucchini in place of the tomatoes if that’s what you have on hand.

One-Pot Shrimp and Rice
An easy one-pan shrimp dinner that feels fancy but costs very little to make! The rice cooks right in the pan for extra flavor, and a squeeze of lime brightens the whole dish. Try swapping lime for lemon or using mixed vegetables instead of broccoli if that’s what you have.

Mississippi Chicken over Penne
All the buttery, tangy flavors of classic Mississippi roast made budget-friendly with chicken breasts instead of beef. Serve it over tender penne pasta with a salad kit on the side for an easy, balanced meal. Chicken thighs work great here too, and you can use egg noodles if pasta’s on sale.

Smoked Sausage & Mushroom Pasta
Smoky sausage, mushrooms, and creamy parmesan come together for a cozy pasta dinner that tastes like comfort in a bowl. You can swap the peas for green beans, mixed veggies, or even spinach for a change in flavor.

Easy Teriyaki Chicken & California Blend Veggies
This quick skillet dinner brings sweet and savory flavor with simple pantry staples like soy sauce and brown sugar. California blend vegetables add color and crunch, but you can use mixed veggies or frozen stir-fry vegetables instead.

Ground Turkey Sloppy Joes with Air Fryer Fries & Green Beans
A family favorite classic made easy with ground turkey and a $1 can of Sloppy Joe sauce; it’s quick, affordable, and satisfying. Serve with homemade fries and green beans for a complete meal or swap the fries for tater tots or sweet potato fries to mix it up.
