Stretch Your Budget: 6 Family Meals for $60 at Walmart (Week #83)
It’s almost two weeks until Christmas, which means crazy busy weeknights and trying to stretch every paycheck as far as possible this month! So this week we went super easy and super affordable. Our total this week came from Cocoa, FL and was only $47.62!
As a bonus, we have lots of basic ingredients on the grocery list this week, so there’s a good chance you already have some of these items at home. Don’t forget to check your pantry, fridge, and freezer first. It’s one of the easiest ways to save a few extra dollars right away!

Affordable Weeknight Meals
Sheet Pan Italian Tomato-Basil Chicken with Rice
This sheet pan dinner roasts chicken leg quarters with zucchini and onions in a simple tomato-basil glaze, and it’s perfect served over rice to catch all the flavor. You can swap zucchini for yellow squash, onions for peppers, or use pasta instead of rice if you already have some on hand.

Polish Sausage Fried Potatoes, Onions & Cabbage
This skillet meal combines sausage, crispy fried potatoes, onions, and cooked-down cabbage for a hearty, filling dinner. You can swap cabbage for bell peppers or mixed veggies, or use smoked sausage or turkey kielbasa if that’s what you have.

Crockpot Ranch Chicken, Potatoes & Green Beans
Everything cooks together in the crockpot (chicken, potatoes, butter, ranch seasoning, and frozen green beans) for a cozy, low-effort meal. Swap in baby carrots or frozen mixed veggies, or use cream of chicken soup for a creamier version.

Ground Turkey American Goulash with Peas
A one-pot goulash made with ground turkey, tomatoes, pasta, leftover tomato paste, and simple seasonings, served with canned peas on the side. Swap macaroni for any short pasta, use diced tomatoes with green chilies for extra flavor, or serve green beans instead of peas.

Chicken & Rice Burrito Bowls
Shredded taco-seasoned chicken is served over rice with canned corn, beans, salsa, cheese, and sour cream for a simple and customizable bowl night. You can swap salsa for a can of Rotel, use tortilla chips for added crunch, or add a squeeze of lime or chopped cilantro if you have it on hand.

Cheesy Homemade Mac & Cheese with Ham & Broccoli
Creamy stovetop mac and cheese is tossed with diced ham and tender broccoli for an easy, kid-friendly comfort meal. You can swap broccoli for peas or spinach, use any shredded cheese you already have, or replace ham with bacon or leftover chicken.
