Feed Your Family for Less: 6 Dinners Under $60 (Week #82)

Thanksgiving is over, the leftovers are gone, and now we’re in that funny little stretch before Christmas where life feels extra busy, but everyone still needs to eat! So, this week, we’re getting back to regular meal planning with simple, easy dinners that don’t require a ton of ingredients or time.

You’ll notice that we didn’t use a lot of fresh produce in this plan. That’s intentional! This time of year, low-cost fresh produce can be hard to find, and I’ve also realized that I have a habit of buying veggies in December… and then letting them go bad before I ever get around to using them. Do you have that problem too? So this week we are leaning on frozen veggies because they’re affordable, they don’t spoil, and they work perfectly in busy-season meals.

Let’s take the stress out of the holiday rush and still get dinner on the table without breaking the budget.

Easy Weeknight Meals

Teriyaki Chicken Stir-Fry with Ramen Noodles

This quick skillet meal uses sliced chicken, frozen stir-fry veggies, teriyaki sauce, and ramen noodles for an easy weeknight dinner. You can swap in spaghetti noodles or use whatever frozen veggies you have on hand.

Creamy Cajun Smoked Sausage & Veggie Skillet

Smoked sausage, peppers, onions, Cajun seasoning, and leftover Alfredo sauce come together with egg noodles in a creamy, flavorful skillet dish. If Cajun seasoning feels too spicy, swap for Italian seasoning or simple garlic powder.

One-Pot Lemon Chicken & Rice with Broccoli

Everything cooks together in one pot, giving you tender chicken, bright lemon flavor, fluffy rice, and steamed broccoli with almost no cleanup. Swap broccoli for peas, green beans, or any frozen vegetable you prefer.

Philly Rice Skillet

Ground turkey cooks with peppers, onions, and simple seasonings, then simmers with rice for a cozy, cheesesteak-inspired one-pot dinner. You can swap mozzarella for provolone or even cheddar, depending on what you already have.

Chicken Alfredo Spinach Pizza

A pizza crust mix becomes the base for a creamy Alfredo pizza topped with cooked chicken, spinach, and mozzarella. You can swap spinach for broccoli, mushrooms, or leave the veggies off for picky eaters.

Ham & Cream Cheese Crescent Rolls with Green Beans

Crescent rolls are filled with a jalapeno-popper-style mixture of softened cream cheese, shredded cheddar, ranch seasoning, and chopped ham, then baked until golden. Swap green beans for corn or a side salad, and leave out the ham if you want a meatless version.
