A Week of Easy Dinners for $60 (No Stress, No Fancy Ingredients) Week#93

Spring always seems to bring a packed schedule with it. Between school events, holidays, and everything else popping up, the weeks can start to feel a little chaotic. When life gets busy, dinner is usually the first thing to feel overwhelming.

This week, we focused on simple, no-stress meals that don’t take a long list of ingredients or a ton of time to make. Everything is easy to throw together, family-friendly, and made with ingredients you can actually find without hunting all over the store. Our total for 25 items came to $54.61 at the Super Walmart near Willis, Texas, making this a full week of dinners that keeps both time and budget in check.

Quick & Easy Dinner for the Week

Sweet Chili Glazed Ham Steaks with Pineapple Rice & Asparagus

Using the pineapple juice to cook the rice adds extra flavor without extra cost. If you don’t have asparagus, green beans or broccoli work just as well, and you can skip the pineapple step entirely for a simpler version.

Crockpot Lemon Garlic Chicken with Rice & Carrots

This is a great set-it-and-forget-it meal for busy days. You can swap baby carrots for sliced regular carrots or even potatoes, and the chicken can be served whole or shredded depending on your preference.

Sloppy Joe Pinwheel Sandwiches with Spinach Salad

These are a fun twist on sloppy joes and easy to customize with whatever cheese you have on hand. If you don’t have crescent dough, you can use pizza dough instead for a similar rolled and sliced pinwheel-style sandwich.

Honey Mustard Chicken Skillet with Potatoes & Green Beans

Using bottled honey mustard keeps this meal budget-friendly and quick. The microwave potatoes save time, but you can roast them in the oven or air fryer if you prefer, and any canned or frozen veggie works in place of green beans.

Turkey Ranch Burgers with Air Fryer Fries & Baby Carrots

Mixing ranch seasoning into the turkey adds flavor without extra ingredients. If you don’t have an air fryer, the fries can be baked in the oven, and you can swap baby carrots for any easy raw veggie like cucumbers, tomatoes, etc.

BBQ Chicken Flatbreads with Spinach Side Salad

Flatbreads make this a quick and flexible dinner that feels a little different from the usual. If you don’t have pita or naan, you can use French bread, Italian bread, or even pizza dough for a similar base, and add sliced red onions if you have them on hand for extra flavor.
