Extreme Budget Meal Plan: 6 Dinners Using Pantry Staples (Week #78)
The government has been shut down for weeks, and I know a lot of families are feeling the stress. When paychecks are delayed and grocery budgets get tighter, it can feel overwhelming to plan meals. That’s exactly why I put this menu together: six full dinners using mostly canned beans and pantry staples.
The best part? Most of these ingredients are common food pantry items, like beans, rice, canned veggies, and pasta. Even if money is tight or you’re relying on donated food right now, you can still turn those basic staples into warm, filling dinners that feel like real comfort food.
The total for all six meals came to just $46, and each one feeds a family of four. Whether you’re making do with what’s in your pantry or trying to stretch your grocery dollars, these recipes will help you get through the week without the stress.

Groceries Needed for the Menu

If you want to see the full shopping list on Walmart in your area, all you have to do is click my Walmart Grocery list and change the zip code to your area. *This is an affiliate link, and I do make a small commission on any purchases, but at no additional cost to you!*
**** Please note, that every once in a while, an item that I pick turns out to be regional. This means that it may be a much higher price in some areas. Always double check the list and if you see an item that is much higher than normal, just adjust as needed.
Budget Pantry Dinners
Fiesta Nachos
A colorful sheet pan dinner made with black beans, corn, and diced tomatoes over tortilla chips, all baked with melted cheese for the perfect easy meal.

Ham & Bean Soup
This cozy soup comes together with canned beans, diced ham, carrots, and celery in a simple broth that tastes like it simmered all day. Use smoked sausage, bacon, or even a leftover ham bone for extra flavor, or add a diced potato to stretch the servings.

Chickpea Chicken Burgers with Air Fryer Sweet Potato Fries
Canned chickpeas and chicken come together for easy, protein-packed burgers that taste homemade. Serve with crispy air fryer sweet potato fries for a satisfying, budget-friendly meal. Skip the chicken for a meatless version or use white beans instead of chickpeas.

Chili Mac with Ground Turkey
A family favorite that combines classic chili flavors with cheesy macaroni for the ultimate comfort food dinner. Swap the ground turkey for any ground meat or use leftover taco meat, and add a splash of broth if you prefer it saucier.

Cowboy Casserole with Tater Tots and Green Beans
Baked beans, sliced hot dogs, and melted cheese layered over crispy tater tots make a fun, hearty dinner everyone loves. Serve with green beans on the side for a complete plate. Swap the hot dogs for diced ham, sausage, or BBQ chicken to mix up the flavor.

Bean & Cheese Burritos
Creamy refried beans and crispy tater tots make a hearty, fun filling for these quick burritos. Serve with yellow rice, shredded lettuce, and diced tomato for a full meal. Swap tater tots for instant mashed potatoes, rice, or scrambled eggs to stretch the beans even further.
