Week Full of Dinners for $60 at Walmart – Easy, Affordable, and Delicious
This week, I decided to take a slightly different approach with our meal plan, and it all started with a message from someone in our community. They shared how hard it can be to keep up with fresh produce: the chopping, the prepping, and especially the waste when things don’t get used in time. That really hit me!
So, for this week’s plan, I leaned into frozen vegetables. They’re often overlooked, but they’re a smart and affordable option! Plus, there is no prep, no pressure to use them before they go bad, and just as nutritious. Whether you’re dealing with limited time, mobility issues, or just want to cut down on food waste, frozen veggies can be a total game-changer.
The full meal plan came in at just $54.91 with all ingredients bought at Super Walmart in Harrison, Arkansas. Each recipe is built to be simple, filling, and flexible with frozen vegetables doing a lot of the heavy lifting.

Minimal Ingredient Meals
One Pot Sausage Mac & Cheese with Green Beans
I love a good one pot meal and this one is so easy to make! It’s also really easy to adjust as well. You can easily make this with any ground meat you like (ground turkey, ground pork, ground chicken, ground beef, etc). You can also make this more a chili mac by adding chili seasonings, a Tex-Mex style mac by adding taco seasoning, or more Goulash-style by adding Italian Seasoning and diced tomatoes!

Air Fryer Garlic Parmesan Chicken Thighs with Rice & Broccoli
I hate to admit it but I am kind of a snob when it comes to parmesan cheese. Most of the time, I am not a huge fan of the powdery stuff but my kids love it! I have gotten pretty creative in ways to use it and this dish is one of those ways! Normally you can switch out the grated for regular parmesan cheese, but this dish actually works best with the powdered stuff! (P.s. my kids call this parmesan cheese the “Snow Cheese.”)

Kielbasa with Mashed Potatoes & Mustard Gravy
I have always been a big fan of mustard on hot dogs and kielbasa. It just always brings out the taste for me. So, one night I decided to try to make a gravy using mustard, and it came out so yummy! I kind of feel like this the grown-up version of hotdogs with mustard! LOL

Slow Cooker Italian Chicken Thighs with Pasta
I love super simple crockpot meals, and this is just so easy. Similar to a Salsa chicken, we are switching it up by using pasta sauce instead of salsa for more Italian feel. This can easily be made with any cut of chicken as well. Don’t be afraid to throw other veggies in this too. Try out some shredded carrots, mushrooms, and so much more!

Shrimp Bowls with Coconut Rice
I really thought I wasn’t a big fan of coconut for years, turns out I am just not a fan of super sweet coconut and the texture. So, coconut rice is actually a nice mild option for me! If you are not a fan of coconut you can easily swap out the coconut for pineapple juice or another flavor option instead. These Shrimp Bowls are perfect for a quick meal and also a great leftover buster for vegetables!

Chicken & Potato Tacos
Every time I use canned chicken or tuna, I swear some people lose it. I’m not sorry because it is an affordable protein option and its shelf stable. Now this recipe can easily be done with any cooked and shredded chicken, so that is always an option if you don’t want to use canned!

Low-Cost Fruit Options to Add:
I am a huge fan of adding fruit to dinners. This small, yummy part helps kids know they will love at least something on their plate.
So, whenever I have a little wiggle room in my budget, I try to pick up 2-3 fruits to add to meals. Here are some good options that you can grab this week! (Try mixing fresh fruit and canned fruit together for some added variety)
It’s also been shown that most Americans don’t eat enough fruit and vegetables, so add some to your dinner! (Remember you don’t need a ton of fruit either, just a 1/4 to 1/2 a cup can help fill you up at mealtime.)
*Walmart is not always the cheapest when it comes to fresh fruits. Lots of local stores run better sales and have fruit as loss leaders, so check your local stores for some better deals if needed!*
