Week 58: Full Week of Dinners for Under $60 at Walmart!

This week is a little different because I feel like it is a good mix of fancy but also super simple meals! You can have some of those “fancy” flavors and do it well on a little budget.

Our prices this week came from the New Haven, Connecticut Super Walmart and our total was $59.62. So close to our $60 budget! Don’t forget to check your pantry and freezer because you may already have some of these items so your total could be much less.

As with all our meal plan, feel free to substitute out what you already have! Already have boneless chicken thighs or already cooked and shredded chicken in your freezer? That’s awesome and both of those will easily work for 3 of our dinners this week!

Pesto Chicken Sandwiches with Home Fries

You can totally adjust the amount of pesto to your preference. Maybe go a little more or go a little less, it all depends on how much you like the flavor! You can also make your own pesto at home using spinach for a fun twist.

Chorizo & Cheese Quesadillas with Salsa Verde Rice & Southwest Corn

Chorizo comes in lots of options so you can go with beef, pork, chicken, or even plant based. If you are a not a fan of salsa verde, you can easily swap that out to any salsa you like!

Chicken Corden Blue Casserole

Personally, I love egg noodles, but you can easily use any noodles you have. I would probably skip spaghetti noodles, but you never know until you try right?

Lemon Pepper Shrimp over Rice

I am not a huge fan of lemon pepper seasoning that you buy, so this is my version that I love to make at home! You can even switch this up a little and go with a lime instead. Sometimes limes are much cheaper than lemons!

Chicken Fajita Pasta

This is an awesome base recipe, and you can do so much with this! Maybe add some black beans or corn? Add some sliced avocado? Yum yum yum!

Ham & Broccoli Stromboli with Side Salad

You can really make anything into a stromboli and this version totally remind me of the old school Hot Pockets! Dishes like this are a perfect leftover buster so don’t be afraid to add extra veggies or even meat to this one!

Low-Cost Fruit Options to Add:

I am a huge fan of adding fruit to dinners. This small, yummy part helps kids know they will love at least something on their plate.

So, whenever I have a little wiggle room in my budget, I try to pick up 2-3 fruits to add to meals. Here are some good options that you can grab this week! (Try mixing fresh fruit and canned fruit together for some added variety)

It’s also been shown that most Americans don’t eat enough fruit and vegetables, so add some to your dinner! (Remember you don’t need a ton of fruit either, just a 1/4 to 1/2 a cup can help fill you up at mealtime.)

*Walmart is not always the cheapest when it comes to fresh fruits. Lots of local stores run better sales and have fruit as loss leaders, so check your local stores for some better deals if needed!*

I love the kiwis and the avocados at Walmart! These are items I regularly purchase whenever I am in store. Keep in mind though that you want to keep both of these items on your counter until they start to show signs that they are ripe. Then place them in the fridge to slow down the quick ripening.

If you place them in your fridge right away the kiwis and the avocados will stay hard and not ripen at all!
