Week 57: 6 Dinners for under $60 at Walmart

I know we are all nervous about what grocery prices are going to look like in the future. So, I wanted to share some easy and comforting dinners this week that don’t require a ton of produce.

Our total this week is $59.16 at the Super Walmart in Lynchburg, Virigina. This was really close to our $60 budget, but there are lots of very common ingredients on this list. You may already have the basics like mayo, mustard, and bread crumbs!

Don’t forget to check your pantry, fridge, and freezer first before you go shopping, because you could easily get your total much less than mine. Also, don’t be afraid to switch up ingredients with what you already have at home. Don’t have fettucine noodles but already have spaghetti noodles? That’s totally fine!

Dinners for the Week

1. Slow Cooker Creamy Ranch Chicken over Rice & Sweet Peas

This totally reminds me of cream of chicken over rice that I had as a kid, but now I can just pop it in the crockpot! So little effort but definitely a comfort food. If your kids are not picky, you can totally mix the vegetables in with the sauce too.

2. Chicken Parmesan Meatballs with Noodles & Spinach Salad

This is such a fun and easy twist on basic spaghetti and meatballs! If you don’t have ground chicken, you can easily switch this out to be ground beef or turkey.

3. Slow Cooker Ham and Potato Soup

Ok, technically this one does not have a veggie to go with it, so I will leave that up to you. At my house, we would just double up the veggies on another night!

4. Ham & Veggie Casserole

You may be wondering why this one has 2 bags of vegetables? For some reason if I only make one, we always run out! At least with 2 bags, I have a chance at having leftovers!

5. Shrimp Fettucine with Spinach and Tomatoes

Technically not a One Pot Pasta, but it’s just as easy! I love to change this up depending on my mood with the seasonings.

6. Crispy Chicken Thighs with Roasted Potates

This is another one that you can totally change it up with the seasoning. Sometimes I go with a smoked paprika, other times I go with garlic herb blend!

Low-Cost Fruit Options to Add:

I am a huge fan of adding fruit to dinners. This small, yummy part helps kids know they will love at least something on their plate.

So, whenever I have a little wiggle room in my budget, I try to pick up 2-3 fruits to add to meals. Here are some good options that you can grab this week! (Try mixing fresh fruit and canned fruit together for some added variety)

It’s also been shown that most Americans don’t eat enough fruit and vegetables, so add some to your dinner! (Remember you don’t need a ton of fruit either, just a 1/4 to 1/2 a cup can help fill you up at mealtime.)

So far fruit prices don’t seem great, but they don’t look awful either. I will be keeping a close eye on this for the next few months!
