If you are sick of leftover lasagna, try out one of these ideas to transform that lasagna into a whole new dish!

1. Lasagna Stuffed Zucchini Boats

Cut zucchinis in half lengthwise and scoop out the centers to create “boats.” Fill the zucchini boats with leftover lasagna and place them in a baking dish. Top with marinara sauce and cheese, then bake until the zucchinis are tender and the cheese is golden and melted.

2. Lasagna Croquettes

Form the leftover lasagna into small balls or patties. Roll them in breadcrumbs, then fry them until golden and crispy. Serve them as a delicious appetizer or snack with marinara sauce for dipping.

3. Lasagna Egg Rolls

Take small portions of leftover lasagna filling and roll them up in egg roll wrappers. Fry the egg rolls until they are golden and crispy. They end up tasting like a much better homemade version of Pizza Rolls. Serve them with a dipping sauce of your choice, such as sweet chili sauce or marinara sauce. (Growing up, we regularly turned leftovers into egg rolls, and they were always a huge hit! Plus, egg roll wrappers last a long time in the fridge and are super cheap on sale.)

4. Lasagna Frittata

Chop the leftover lasagna into small pieces and whisk some eggs with milk or cream. Pour the egg mixture into a hot skillet and add the chopped lasagna. Cook until the eggs are set and the bottom is golden brown. Flip the frittata and cook the other side until cooked through. Serve it as a hearty breakfast or brunch option.

5. Lasagna Stuffed Mushrooms

A few years ago, we had a party for friends that involved a lot of pans of lasagna. Unfortunately, about half of the guest list was not able to make it due to weather and we ended up with a lot of already cooked lasagna.

Rather than let the lasagna go to waste, we decided to get really creative and transformed them into new dishes. Sometimes in a pinch, we come up with some really fabulous ideas!
