I know how scary that uncertainty feels when you’re trying to keep food on the table.
So, this week, I wanted to go back to basics. These three dinners use common food pantry staples like canned chicken, tuna, and canned veggies. We can make simple, filling meals your family will actually enjoy with these items.
Whether you’re stretching what you already have or trying to plan ahead, these recipes prove that even when times are tough, you can still make something good to eat and share together.

This cozy meal is the definition of comfort food. It’s creamy, hearty, and filled with veggies. You can swap canned mixed vegetables for frozen ones or even leftover cooked veggies, and any cream-style soup works if you’re out of cream of chicken.

Chicken Enchilada Casserole
This cheesy, saucy dinner brings all the enchilada flavor with half the work! You can use corn or flour tortillas (or even crushed tortilla chips) and add in black beans or canned tomatoes/salsa to make it stretch even further.

Tuna Noodle Casserole
Classic and comforting, this dish turns simple pantry staples into a warm, satisfying dinner. If you don’t have peas, try green beans or corn instead, and swap cream of mushroom soup for cream of celery for a different flavor twist.
