No-Fuss Comfort Food for Busy Families (Week #87)

Sometimes we skip over certain meats like pork chops at the grocery store because the cost is so high. A simple way to fix this is to buy a large cut of meat, like a 5lb center-cut pork loin, and cut it down yourself!

That is exactly what we did for Week #87. We took one large loin and broke it down into a roast, individual chops, and cubes to create three yummy meals with a really low price tag. Between the pork, some frozen chicken, and a little ground turkey, we built a full menu of family favorites.

This week, our shopping list used a total of 27 items, and the total was only $59.22 at Walmart. Since there are quite a few pantry basics on this list, you could easily get your total even lower than mine if you already have things like canned vegetables, cinnamon, or eggs at home!

Budget Friendly Dinners for Families

We will be breaking down a larger cut of pork in order to end up with a pork roast, pork chops, and then cubed pork for the week!

Pork Chops, Mashed Potatoes, and Cinnamon Apples

This is a cozy, classic dinner where savory pork meets buttery potatoes and lightly sweet apples. You can swap sweet potatoes for regular potatoes, use pears instead of apples, or season the pork with garlic powder or paprika if you want a slightly different flavor profile.

Crockpot Ranch Chicken & Veggies

This dump-and-go meal gives you tender chicken and seasoned veggies with almost no prep. Zucchini or carrots can replace the green beans, and cream of chicken soup can be added for a richer sauce if your family prefers it creamier.

Homestyle Pork & Beans with Cornbread

This is a simple, filling comfort meal with hearty pork and saucy beans that pairs perfectly with cornbread. You can swap baked beans for chili beans or BBQ beans, and the pork can be replaced with leftover shredded meat if needed.

Creamy Italian Chicken over Noodles

Italian dressing creates an easy, tangy sauce that coats the shredded chicken and noodles beautifully. Any short pasta or egg noodles work in place of rotini, and corn or green beans can sub in for the peas without changing the vibe.

Salsa Verde Pulled Pork Tacos & Savory Rice

Slow-cooked pork in salsa verde keeps this meal hands-off and flavorful, with rice soaking up every bit of that cooking liquid. The pork can be served over bowls instead of shells, and the rice works just as well with brown rice or even quinoa if that’s what you have.

Sweet & Sour Turkey Stir-Fry Noodles

This quick skillet meal balances sweet, savory, and veggie-packed goodness in one pan. Ground pork or chicken works just as well as turkey, and ramen or rice noodles can replace spaghetti noodles in a pinch.
