Low Budget Summer Meal Plan at Walmart (6 Dinners for $60) Week #23

This week is all about low effort but super yummy meals. As a bonus they are not only family friendly but kid friendly meals as well!

Summertime is getting hotter, so we really don’t want to heat up the house with an oven. We will be doing all recipes that do not require an oven!

Our total for this meal plan came out to $59.15 at the Super Walmart in Amarillo, Texas. I am sure you can get it lower, because you probably already have a few items at home like ranch dressing, white rice, and maybe even honey too!

****We updated this menu with new prices from the same store in May 2025. Our updated total was $62.59. This was mostly due to 4 main products: tomatoes, sweet potatoes, smoked sausage, and chicken thighs. Not bad at all considering economic changes in the last year!*****

Simple Recipes for the Week

Pizza Bagels with Spinach Salad

This is a great kid-friendly meal that kids can actually help make as well. Don’t forget to check out your fridge for extra toppings like mushrooms, peppers, olives, etc.

Grilled Chicken Taco Salad

This is a fabulous twist on taco salad! You can also easily substitute chicken thighs with chicken tenderloins, breasts, or even leg quarters. You will want to remove the meat from the bone, but that is an easy step if you already have bone-in chicken at home!

Turkey Ranch Wraps with Sweet Potato Chips

This is one of those super easy low effort meals that are always a crowd please. Also perfect for super busy nights as well!

Crockpot Honey Garlic Chicken with Rice

I love this simple sauce on chicken! Once again you can use any cut of chicken you already have, and it even works for pork loins or pork chops. Switch it up and serve it over noodles instead of rice if you want!

No Bake Veggie Lasagna

I guess a more accurate name would be to call this a lasagna bowl, but no matter what you call it, it is super yummy! Plus, you can pick and choose what veggies go into each bowl if you have some picky eaters!

Pepper Sausage Kebabs with Parmesan Rice

This is just a fun meal! My kids really like to help with this one too. You can also add more vegetables if you like. Easy additions would be mushrooms, yellow squash, zucchini, and even small tomatoes like cherry or grape varieties.

Each of these meals could easily serve 4-8 people depending on appetite. So, if you are a family of four, you could have plenty of leftovers the next day for lunches.

Low-Cost Fruit Options to Add:

I am a huge fan of adding fruit to dinners. This small, yummy part helps kids know they will love at least something on their plate.

So, whenever I have a little wiggle room in my budget, I try to pick up 2-3 fruits to add to meals. Here are some good options that you can grab this week! (Try mixing fresh fruit and canned fruit together for some added variety)

It’s also been shown that most Americans don’t eat enough fruit and vegetables, so add some to your dinner! (Remember you don’t need a ton of fruit either, just a 1/4 to 1/2 a cup can help fill you up at mealtime.)

*Walmart is not always the cheapest when it comes to fresh fruits. Lots of local stores run better sales and have fruit as loss leaders, so check your local stores for some better deals if needed!*
