Italian Sausage, Sweet Potatoes, & Veggies Sheet Pan

Italian Sausage, Sweet Potatoes, & Veggies Sheet Pan

Yield: 4-6

Ingredients

  • 1/2 onion (sliced)
  • 2-3 Sweet Potatoes
  • 2 apples
  • 5-6 links Italian Sausage
  • Oil/ Favorite Seasonings
  • Lettuce/ Shredded Carrots

Instructions

    1. Slice the onion into long slices, peel and chop the sweet potatoes into 1 inch chunks, and core/slice the apples. I put everything together in a bowl and drizzle it with oil and seasonings. I prefer to do either an Italian Blend or Garlic Herb blend, but you can use whatever seasonings you like.
    2. Arrange the veggies on a greased sheet pan or large baking dish. I then drizzle the sausage with a little oil too and lay those on the pan as well.
    3. Bake in 400 degree oven for about 20 minutes, flip everything over and bake another 15-20 minutes. I let everything rest about 5 minutes, and then slice the sausage into rounds, but you can leave them whole as well.
    4. Serve your Sausage & Veggies with a side salad of leftover lettuce, carrots, and any salad dressing you already have!

Possible Swaps

This sheet pan dinner is super flexible, so use what you have on hand! You can swap the Italian sausage for smoked sausage, kielbasa, or even chicken sausage depending on what’s on sale.

If sweet potatoes aren’t your favorite (or you’re out), regular potatoes, butternut squash, or carrots work just as well.

Pears can replace apples for a similar touch of sweetness, or you can leave the fruit out entirely for a more savory dish.

Any blend of seasoning works here—think Cajun, ranch, or rosemary garlic.

And if you don’t have lettuce and carrots, serve the sausage and veggies over rice, quinoa, or even a quick bagged coleslaw mix for a balanced meal.
