Hearty, Homemade Dinners for $60 This Week (Week #89)
This week’s menu focuses on simple, comforting meals that make the most of affordable winter produce. We leaned into ingredients that are easy to find this time of year and flexible enough to work across multiple dinners without extra prep or specialty items. The goal was to keep meals filling and practical while still feeling fresh and balanced for busy weeknights.
The full menu came in at $52.75 at the Super Walmart in Wooster, Ohio for a total of 25 items. That keeps this week well under the $60 target while still covering six complete dinners.

Ham, Broccoli & Cheese Calzones
These calzones are a great way to turn diced ham and frozen broccoli into a filling, kid-friendly dinner with minimal prep. You can swap cheddar for mozzarella or Colby jack, use crescent dough instead of pizza dough, or add a little mustard or ranch seasoning to the filling for extra flavor.

Greek Chicken with Lemon Rice & Cucumbers
Tender, seasoned chicken is served with bright lemon rice and crisp cucumbers for a fresh but simple dinner. You can swap chicken broth for water in the rice if needed, use lime instead of lemon in a pinch, or serve the chicken over leftover rice if you already have some cooked.

Chorizo & Potato Tacos with Zucchini
Microwaved potatoes make these tacos quick and reliable while chorizo adds bold flavor without extra seasoning. You can use breakfast sausage if chorizo is unavailable, corn tortillas instead of flour, or swap zucchini for yellow squash or sautéed peppers as the side.

This one-skillet meal is fast, flavorful, and budget-friendly with ground turkey and crisp green beans over rice. You can use bottled teriyaki or garlic sauce instead of sweet chili, frozen green beans instead of fresh, or serve it on its own without rice if needed.

Chicken & Corn Chowder
This cozy chowder uses potatoes to naturally thicken the broth, making it hearty without extra steps. You can add an extra potato for a thicker chowder, use evaporated milk instead of regular milk, or stir in a little shredded cheese at the end for added richness.
