Easy Fall Comfort Meals on a Budget (6 Dinners for $60) Week #77

I love a good hearty comfort meal when it’s chilly outside, but I love it even more when it doesn’t take forever to cook or require much effort! The meals this week use 28 common grocery items to make 6 cozy dinners the whole family will love.

We’ve got a little bit of everything: a sheet pan meal, a one-pot meal, a slow cooker favorite, and more! The total for all these ingredients came to $58.86 at the Super Walmart in Fayetteville, GA.

Be sure to check your pantry, fridge, and freezer before shopping, because chances are you already have several of these ingredients on hand, which means your total could be even lower than mine!

Apple & Onion Pork Loin (Crockpot)

A cozy fall classic that’s equal parts sweet and savory! The apples and onions make the pork tender and flavorful, while the carrots and mashed potatoes turn it into a hearty, complete meal. Try swapping the apples for pears or adding extra carrots for a more savory twist.

Chicken & Stuffing Bake

This family favorite is creamy, cozy, and easy to love! Everything gets mixed together and baked into one comforting casserole. You can swap the cream of chicken soup for cream of mushroom or celery, or toss in a handful of shredded cheese for extra richness.

Turkey Salisbury Rice Bowls

These Salisbury-style rice bowls are cozy, savory, and full of old-fashioned flavor. The rich gravy, mushrooms, and peas make every bite satisfying, and they’re ready fast on busy nights. Not a mushroom fan? Try frozen corn instead, or serve the gravy over mashed potatoes instead of rice.

I am a huge fan of adding fruit to dinners. This small, yummy part helps kids know they will love at least something on their plate.

So, whenever I have a little wiggle room in my budget, I try to pick up 2-3 fruits to add to meals. Here are some good options that you can grab this week! (Try mixing fresh fruit and canned fruit together for some added variety)

It’s also been shown that most Americans don’t eat enough fruit and vegetables, so add some to your dinner! (Remember you don’t need a ton of fruit either, just a 1/4 to 1/2 a cup can help fill you up at mealtime.)
