Budget-Friendly Dinner Ideas for Busy Weeknights (Week# 92)

Spring is right around the corner, which means we’re finally starting to see better options in the produce department. It’s not quite summer-level abundance yet, but it’s the perfect time to start mixing in a few fresh ingredients with the pantry and freezer staples we rely on to keep costs low.

This week’s menu is a balance of both fresh items like zucchini, romaine, and tomatoes paired with budget-friendly basics to stretch every dollar. The result is a lineup of simple, family-friendly dinners that feel a little lighter without making your grocery bill heavier.

Our total for 29 items at the Super Walmart in Guthrie, Oklahoma came to just $55.80, proving that you don’t have to sacrifice fresh ingredients to stay on budget.

This cozy bake is a great way to turn simple ingredients into a filling meal. If you don’t have broccoli, peas or mixed vegetables work just as well, and you can bake the biscuits separately if you prefer a crispier texture.

Sausage & Cabbage Noodle Skillet

Using coleslaw mix keeps this quick and budget-friendly while adding a built-in veggie. For extra flavor, try a splash of soy sauce or a little vinegar at the end, or swap egg noodles for any pasta you already have.
