Skip the Oven: 6 Quick Meals for Hot Days under $60 (Week #67)
Looking for a week of easy, affordable dinners that won’t heat up your kitchen? This week’s no-oven meal plan comes in at just $56.06, with all ingredients priced from the Super Walmart near Gilmanton, New Hampshire.
We’ve got fun takes on wraps, a fresh way to serve pulled pork, and by popular request we have not one, but two new orzo recipes! If you’ve been wondering how to cook orzo beyond basic pasta salad, this week’s lineup is full of inspiration.
What’s for Dinner?

Grocery List

If you want to see the full shopping list on Walmart in your area, all you have to do is click my Walmart Grocery list and change the zip code to your area. *This is an affiliate link, and I do make a small commission on any purchases, but at no additional cost to you!*
**** Please note, that every once in a while, an item that I pick turns out to be regional. This means that it may be a much higher price in some areas. Always double check the list and if you see an item that is much higher than normal, just adjust as needed.
Meal Prepping Options
If you want to save some time this week, here is a list of things you can make or do ahead of time, in order to need less time to cook!

Simple Meals this Week
Southwest Chicken Wraps
This is a simple and quick meal that is perfect for busy nights! It is also one of those meals you can easily customize and add more to if you want. Throw some spinach or lettuce in there if you like, use up some sour cream or salsa too. (P.s. this works really well with already cooked or rotisserie chickens too!)

BBQ Pork & Cheesy Grits Bowl
You know I love a good bowl of anything, so this week I had to share this fun twist on BBQ pulled pork! You can easily adjust this to your preferences as well like my husband adds chopped jalapenos into his to get some extra heat.

Creamy Tuscan Chicken Orzo
This is a great one pot meal that can easily be changed up! Swap out the fresh tomatoes for sun dried tomatoes, or the spinach for any vegetable you like.

Chili Potato Boats with Spinach Salad
We love chili on top of potatoes! Another fun twist to this one is to do it twice baked potato style and “bake” it in the air fryer. We are hoping you already have some salad dressing this week, but there is about $4 of wiggle room in the budget if you need to pick up some salad dressing for this side salad!

Pork Medallions with Lemon Orzo
Medallions sound all fancy but really it is just smaller center cut pork chops! This is a great one that can totally be changed up based on what seasoning you use on the pork. I tend to go basic with a garlic herb blend, but you can go as wild or traditional as you like!

Homemade Chicken Tenders
Chicken Tenders in the air fryer is so easy! It literally is like shake and bake! Season your breadcrumbs with your favorite seasonings, then simply coat your chicken strips with mustard (this is a substitute for eggs but you can totally use eggs if you have them!) then dredge into the seasoning bread crumbs! My kids are not huge fans of the KFC bowls, but these chicken tenders are perfect to serve that way, so adjust for your family preferences.

Low-Cost Fruit Options to Add:
I am a huge fan of adding fruit to dinners. This small, yummy part helps kids know they will love at least something on their plate.
So, whenever I have a little wiggle room in my budget, I try to pick up 2-3 fruits to add to meals. Here are some good options that you can grab this week! (Try mixing fresh fruit and canned fruit together for some added variety)
It’s also been shown that most Americans don’t eat enough fruit and vegetables, so add some to your dinner! (Remember you don’t need a ton of fruit either, just a 1/4 to 1/2 a cup can help fill you up at mealtime.)
*Walmart is not always the cheapest when it comes to fresh fruits. Lots of local stores run better sales and have fruit as loss leaders, so check your local stores for some better deals if needed!*
