Easy Lemon Recipes for Dinner
Every spring, you start to see citrus like lemons go on sale, and it’s the perfect time to grab a few extras. They’re cheap, they last a while, and they can completely change the flavor of a meal.
Lemons are one of those simple ingredients that can take a basic dinner and make it feel fresh and exciting. Here are some of my favorite easy lemon dishes to help you mix things up this week!
Recipes using Lemons
Baked Lemon Chicken
Use whatever chicken thighs are cheapest—bone-in for more flavor or boneless for quicker cook time. You can also swap Italian seasoning for any blend you like (even just garlic powder + paprika works great).

Lemon Butter Pasta
This is a great “use what you have” meal! Any pasta shape works, and bottled lemon juice is totally fine. Add a little pasta water if needed to loosen the sauce and make it extra silky.

Lemon Butter Tilapia
Any mild white fish works here (like cod or pollock), especially if it’s on sale. If using frozen fillets, just thaw first and pat dry so the sauce doesn’t get watery.

Lemon Chicken and Rice (One Pot)
Use chicken thighs if you want a little more flavor, or breasts if that’s what you have on hand. You can swap in chicken bouillon + water if needed, and stir in a veggie like peas or spinach at the end for an easy upgrade.

Lemon Chicken Orzo Soup
This is super flexible! Swap orzo for any small pasta or even rice if that’s what you have. Rotisserie chicken works great here too if you want to skip cooking the raw chicken.

Lemon Chicken Stir Fry
Use whatever veggies you have, fresh or frozen both work. Slice the chicken thin so it cooks quickly, and serve over rice or noodles to stretch it even further.

Lemon Garlic Pork Chops
If your pork chops are thicker, just add a few extra minutes of cook time. A little butter added to the sauce at the end can mellow the lemon and make it extra rich.

Lemon Herb Roasted Potatoes
Any potato works here, from russet, red, or yellow. Cut them evenly so they cook at the same rate, and for extra crispiness, don’t overcrowd the pan.

Lemon is such a simple ingredient, but it can completely change the flavor of a meal. Whether you’re working with chicken, pasta, pork, or potatoes, just a little bit of lemon can make everything taste brighter and more exciting without adding extra cost.
You’ll notice that “lemon pepper” is missing from this list simply because I’m not a fan, but if you are, you can easily get that same flavor by adding a little extra ground pepper to any of these dishes. Hopefully, this gives you some easy ways to mix things up and make the most of those lemons while they’re on sale!
