Most of the time, they show up covered in brown sugar or topped with marshmallows, then disappear until the next big holiday gathering. But sweet potatoes can be so much more than a side dish served once or twice a year.
This week we are sharing three easy dinners that use sweet potatoes in three completely different ways. You will see them cubed and microwaved for a taco bowl, simmered into a cozy chicken noodle soup, and roasted until tender for quesadilla night.

Sweet Potato Chicken Noodle Soup
This cozy twist on classic chicken noodle soup uses sweet potatoes instead of white potatoes for a little extra flavor and color. If you are short on shredded chicken, add a few extra noodles or vegetables to stretch it, or swap egg noodles for any small pasta you have in the pantry.

BBQ Chicken Quesadillas & Roasted Sweet Potatoes
