Budget Breakfast Bundle: 3 Family Meals for Less Than $20 (MM#33)
Most of us with kids know what’s coming next week… winter break! And while the break is fun, it also means something else for a lot of families: our kids won’t be eating breakfast at school.
Suddenly we’re on the hook for extra meals, extra snacks, and extra hungry kids at home first thing in the morning. So, this week I put together a super cheap and simple breakfast menu with three easy meals you can mix and match.
They’re kid-friendly, easily adaptable, and best of all the total cost came to less than $20 at Walmart!

Egg, Cheese, and Salsa Quesadillas
These easy breakfast quesadillas come together with tortillas, scrambled eggs, cheddar, and a little salsa for flavor, and they stretch four eggs into a filling meal for the whole family. You can swap the salsa for diced tomatoes, add leftover ham, or use any cheese you have on hand.

Blueberry French Toast Casserole
This cozy casserole uses torn bread, a simple egg and milk mixture, and a full pint of blueberries to create a warm and fruity breakfast that feels special without costing much. You can use any kind of bread, any type of seasoning (vanilla extract, almond extract, white or brown sugar, etc.), replace blueberries with canned fruit, or sprinkle cinnamon sugar on top for extra sweetness.

Peach Yogurt Parfaits
These parfaits layer vanilla yogurt, diced canned peaches, and a crunchy sprinkle of cereal to make a quick breakfast or snack that kids love. You can use fresh fruit, swap in any cereal you already have, or mix in a spoonful of peanut butter for extra protein.

Bonus:
At the end of these three breakfasts you will probably still have a few tortillas, four eggs, a little bread, some yogurt, some cereal, and some milk left over. That means you can easily mix and match those ingredients to create one or even two more simple breakfasts, giving you even more mileage from your $20 week.
