6 Cozy & Easy Dinners Plus Dessert for $70 (Week #41)

I can’t believe it is almost Halloween…..Before you know it, it will be Thanksgiving and Christmas too! Our nights are so busy with different events and school functions that dinner has to be super easy some nights.

This week’s menu is all about home cooking that is simple and easy. Plus you can really get ahead by prepping items when you have time. This will save you a ton of time on the night’s that are crazy busy!

Our budget for this meal plan is $70 at Walmart, and we came in sooooo close! Our total at the Mabelvale, Arkansas (Little Rock) Super Walmart was $69.98! That means we were under by just 2 cents.

What I love about this meal plan is that it is very classic dishes with a twist! These work really well for picky eaters too!

Shopping List

We didn’t have a ton of ingredients this week like on other weeks because we strategically used some items in multiple ways!

Meals for the Week

1. Parmesan Chicken Fingers with Hummus Veggie Pasta Salad

This is a a very versatile dish. You can easily switch up the seasonings in the chicken breading to use your favorite flavors. Maybe try a Greek seasoning or a Ranch seasoning to give it a little zing?

You can also switch up the Hummus Pasta salad by picking a flavored hummus. I am partial to Garlic hummus, but you can easily use a Everything Bagel, Roasted Red Pepper, or Olive Tapenade. We can also switch up the vegetables to use what you have on hand!

2. One Pot Taco Skillet with Corn

I love a super simple yummy dish and really like when you can switch up the parts as well. This is a great leftover buster that you can use for already cooked taco meat too.

3. Turkey Hummus BLTs, Home Fries, and Sliced Cucumbers

For years, I have used hummus the way other’s may use mayonnaise. It’s not that I don’t like mayo but I do like that nice flavor that comes from hummus.

This is another one that you can switch up to what you have. Already have a different lunch meat? Use it! Have some fries or sweet potatoes to use up? Use them!

4. Cheesy Chicken Pasta with Sweet Peas and Bread

I just recently came across this idea for a milk based sauce. I think it works so well because you make it in a large skillet with a lot of surface area.

This is another pasta dish that you can make some easy substitutions. Instead of chicken breasts chunks, you can use canned chicken, canned tuna, chopped ham, and so much more!

Switch out the veggie to whatever you have and you can easily recreate this dish in multiple variations!

5. Instant Stuffing Meatloaf, Cheddar Biscuits, Mashed Potatoes, & Green Beans

I realize this meal is carb fest, but that’s ok when it is all comfort foods right? This meatloaf works really well with all kinds of different stuffing flavors. I personally really like using the cornbread kind, but definitely use whatever you have on hand or you find cheap!

These Cheddar Biscuits are amazing and so easy. You can also change up the cheese and seasonings, to make other variations as well!

6. One Pot Shrimp and Rice with Broccoli

I love a good one pot meal and this one is really good. We typically have a few biscuits leftover, and I would totally serve them with this meal too!

Dessert: Peach Cobbler

Peach Cobbler is one of those desserts that always reminds me of fall weather and being home. This is a super easy version that really can be tweaked to use whatever canned fruit you like. You could easily make a pineapple cobbler, pear cobbler, or use frozen berries or strawberries!
