When it comes to affordable and filling meals, potatoes are hard to beat. They’re not only budget-friendly, but incredibly satisfying and versatile.
Whether you’re using the air fryer, stovetop, or slow cooker, potatoes adapt beautifully to just about any cooking method. Plus, they last a long time in the pantry and can stretch across multiple meals with ease.
In this mini meal plan, we’re turning one 5 pound bag of potatoes into three completely different dinners with no oven required!

Crockpot Cheesy Potatoes with Ham & Green Beans
Creamy, comforting, and cooked low and slow with diced ham and green beans. Swap the ham for cooked chicken, bacon bits, or keep it vegetarian by leaving out the meat.

Air Fryer Twice Baked Potato Skins + Side Salad
Crispy, cheesy potato skins made without the oven and perfect pairing with a fresh salad. Try topping the potato skins with cooked broccoli, black beans, or even leftover chili for a twist.

Ground Turkey & Potato Stroganoff Skillet with Mushrooms
A cozy stovetop meal with ground turkey, potatoes, mushrooms, and a creamy finish. You can swap turkey for ground beef or chicken. Maybe add spinach instead of mushrooms?

Possible Variations
There are so many different varieties of potatoes, and honestly they all work for these dishes! I would definitely be checking your local grocery sales flyers for any deals on potatoes first.
As for the meats that we used this week: ham, bacon, and ground turkey, you can easily swap these out based on what you already have or what your family enjoys. I know some families skip pork, so you could easily swap these out with chicken, beef or turkey bacon, and any ground meat your family likes!
If you are a going meatless you can easily swap ground turkey for lentils, skip the bacon on the potato skins, and leave out the ham in the crockpot.
