A large bag of spinach is usually one of the most affordable fresh produce buys, and it often goes on sale during the winter months, making it an easy way to stretch your grocery budget.

While spinach does make a fabulous side salad for almost any meal, it can also take center stage in cozy soups, flavorful bowls, and even pizza night. This week’s mini menu shows off spinach in three totally different ways that are anything but boring.

This cozy one-pot soup is packed with cheese tortellini, sausage, and spinach for a hearty, filling dinner that’s ready in minutes. You can swap the sausage for ground turkey or leave it out completely for a vegetarian version using veggie broth instead.

Greek Chicken Bowls
