3 Easy Dinners Under $30 Using Canned Tomatoes (Mini Menu #38)
Canned tomatoes are one of those pantry staples that quietly save dinner again and again, yet they’re easy to overlook when meal planning. Whether it’s sauce, crushed, or diced with chiles, they add flavor, body, and flexibility without costing much, which makes them perfect for building budget-friendly meals that still feel complete.
For this mini menu, we used canned tomatoes in three very different ways to create full family dinners, and the entire grocery list came out to 18 items for just $27.35. Even better, this total includes plenty of seasonings and kitchen basics, so if you already have some of those on hand, you could easily bring the cost down even further while still getting three solid, comforting meals on the table.

These skillet-cooked chicken patties are topped with marinara and melty cheese, then served alongside pasta for a comforting, budget-friendly dinner. Swap ground turkey for chicken, use any short pasta you have on hand, or skip the cheese slices and sprinkle shredded cheese instead.

Tomato Lentil Soup
This cozy soup combines lentils and crushed tomatoes into a hearty, filling meal that pairs perfectly with bread and melted cheese on the side. Use water instead of broth, swap thyme for any dried herb blend you like, or add rice or small pasta to stretch it even further.

Spanish-Style Rice with Sausage
Smoked sausage and rice simmer together with diced tomatoes and green chiles for a bold, one-pan dinner with lots of flavor. Kielbasa, turkey sausage, or even hot dogs work well here, and frozen corn or peas can be stirred in at the end if you want a veggie boost.
